If there is one way to your heart, it is through Vietnamese food. We have decided each Friday we will dish up a delicious Vietnamese recipe to remind you how amazing the food in Vietnamese is.
We will share with you the recipes that make our restaurants and hotels so famous.

Today our recipe is from the #SofitelMetropoleHanoi. One of our staff members in Australia attended one of their cooking classes and shared with us this recipe.

Sofitel Metropole Hanoi

Grilled Chicken Skewers with Kaffir Lime leaves
Ga nuong la Chanh


2 kg of chicken
1/2 cup of shallots
Lemon or Kaffir lime leaves – about 30 pieces
3 soup spoons of Fish sauce
3 cm piece of Turmeric root
Cooking oil
Salt and pepper to taste


Take off the bone the chicken. Or use chicken thigh pieces. Chop well with shallots. Cut julienne 10 of the Kaffir lime leaves. Marinade the chicken with a little of the fish sauce, turmeric, salt and pepper, shallots and oil, for a minimum of 2 hours. Preferably longer.
Cut the leaves into a rectangle shape and roll one piece of chicken in each leaf. Put on to the bamboo skewers, grill over charcoal heat if possible.
Serve hot over rice.
